Covid has resulted in all sorts of weird supply chain issues. One of those has been the disappearance of our usual gluten-free muffin mix from the grocery store. While we wait for case to arrive from the manufacturer, we thought it would be worthwhile to try something new – gluten-free donuts. I didn’t glaze them, but the boys loved dipping them in chocolate sauce!
I’ve been trying to get out of the house and exercise a little more regularly. The area around our home is so beautiful it is a pleasure to be out and about!
I enjoy stumbling upon these little painted rocks when I’m out for a walk in the neighborhood!
Cherries are my very favorite fruit … and although life during the Covid-19 pandemic is not a bowl full of cherries at the moment, it’s still a pleasure to enjoy the season!
There is a small group of families that paints rocks and puts them around the neighborhood. The designs vary a lot but they always make me smile when I’m out for a walk.
Our crabapple is in full bloom.
We still have many daffodils, and the tulips are starting to bloom.
And a new Spring bouquet in the kitchen.
A beautiful homemade latte, made with cashew milk. A super special thing for me, since it’s been about six years that I could have coffee or nuts on a regular basis. I made the cashew milk with a device called the Almond Cow.
The white one is a bit further behind, but coming soon.

We have never had a Spring garden quite like this before. It is such a pleasure to go outside, and see all the beautiful new flowers. I had no idea that there are so many varieties of daffodils, or that they smell so amazing! I bring in some cuttings every few days and it has really helped me focus on all the positive things that Spring represents.
My mom brought some cuttings for me when she came for Thanksgiving, and a couple of months later I finally got around to planting them. This guys seems pretty happy now – I’m excited to see buds and some new growth!
Neighborhood cheer during the COVID-19 pandemic.
You may ask yourself what is so special about tomatoes. And, in fact, it’s not a particularly beautiful photograph, either. But after a five-year hiatus, I am able to eat both raw and cooked tomatoes again. And every time I eat them, I am so appreciative of how flavorful and delicious they are!
I’m lucky to work with such an amazing team at work. Every once in awhile I get a thank you from someone on the team, and I feel so blessed that the appreciation is reciprocated. This unexpected little gift and the accompanying note left me feel very lucky indeed.

Awhile back, I pre-ordered a new kitchen device called the Almond Cow, which is supposed to make milk from nuts. I liked the idea because I’m allergic to so many of the additives in milk. It arrived today, and I have to confess that it more amazing than I could have imagined. I tried cashews today, and I took their advice on the remaining pulp – it make a great snack! I have already purchased macadamia nuts, pecans, and almonds to try. I’m thrilled, because being able to make my own nut milk is really a breakthrough in an otherwise pretty restricted diet.
Shaymin is the gratitude Pokemon. The kids gave me this stuff for my birthday a few years ago, and I keep him in our bedroom. I can never have enough reminder to be grateful!
Late wedding gifts from a friend at work. Just a few years after the fact, but still a wonderful gesture – we love them!

I am so grateful for this peaceful holiday at home with my family. We are enjoying the new furniture in our cozy library, and relishing in the completion of a big puzzle and multiple Lego sets.
